Pumpkin Chocolate Chip Bread Recipe for the Holidays

First off I wanted to wish everyone a Happy Thanksgiving! I hope the day was great for everyone yesterday 🙂 Today I wanted to share a recipe that my mom made for my brother and I around this time when we were growing up. It is pumpkin chocolate chip bread! It is great as an evening snack or a morning treat with coffee. It is a relatively simple recipe and only takes about an hour to bake. Let’s get started!

Ingredients:

3 Cups White Sugar

1 (15 ounce) can pumpkin puree

1 cup vegetable oil

2/3 cup water

4 eggs

3 1/2 cups all-purpose flour

1 tablespoon ground cinnamon

1 tablespoon ground nutmeg

2 teaspoons baking soda

1 1/2 teaspoon salt

1 cup regular or miniature chocolate chips

1/2 cup chopped walnuts (optional)

Directions:

Preheat oven to 350 degrees Fahrenheit. Grease and flour three 9×5 inch loaf pans. (I only had two loaf pans so I used a round tin for my last one)

In a large bowl combine sugar, pumpkin, oil, water and eggs. Beat until smooth.

Blend in flour, cinnamon, nutmeg, baking soda and salt.

Fold in chocolate chips to desired chocolatiness.

Fill the 9×5 inch loaf pans 1/2 to 3/4 of the way to the top.

Bake for 1 hour or until an inserted knife comes out clean. Cool on wire rack before removing from pan.
