Refreshing Summer Drinks for a Stay-at-Home Holiday
We weren’t sure we really wanted to celebrate the 4th of July this year, it just feels a bit wrong. That said, it is still a beautiful day for a refreshing iced drink. We made a few different beverages with various combinations of the ingredients below (one of which you may have noticed just so happens to be red, white, and blue). Juicy summer strawberry compote is combined with tart homemade lemonade and refreshing Thai Butterfly Pea Flower Tea to make this a slightly sweet and just tart enough drink. It’s light, not too sugary, and notably day-drinkable. Go for a whole milk, strawberry compote, and tea combo for a more milk tea style beverage.

Butterfly Pea Flower Tea
Ingredients
- 2 tbsp Dried Butterfly Pea Flowers
- 1 cup Boiling Water
- 1 cup Ice Cubes
Instructions
- Add tea to boiling water.
- Steep for 5-7 minutes before straining.
- Stir ice into hot tea.
Strawberry Compote
Ingredients
- 1 lb strawberries
- 2 tbsp granulated sugar
- 3 tbsp water
Instructions
- Hull and chop strawberries.
- Add to a pot with the sugar and water.
- Cook on medium heat, stirring occasionally.
- Continue cooking until strawberry sauce has thickened enough to coat a spoon or until desired consistency is reached.
- Optional: puree strawberries if you want a smooth consistency. Leave chunky if you want some texture or have a large boba straw.
Lemonade
Ingredients
- 4-7 lemons
- 1+ cup granulated sugar
- 2+ cups water
Instructions
- Simmer sugar and 1 cup of water in a pot until the sugar has dissolved.
- Juice lemons until you've reached at least 1 cup.
- Combine lemon juice and simple syrup.
- Add 1 cup of water and mix.
- Add more simple syrup, lemon juice, or water to taste.
Drink on the far left: 2/3 lemonade + 1/3 butterfly pea flower tea + 1 lemon slice
Drink in the middle back: 2 tbsp strawberry compote + 2/3 lemonade + 1/3 butterfly pea flower tea
Drink in the front: 3 tbsp strawberry compote + 3/4 whole milk + 1/4 butterfly pea flower tea
Adjust everything to taste!
